Joseph Chevasse created in 1821, in Chambéry (France), a wine-based aperitif inspired by vermouths from Torino. Inspired by alpine flora, the recipes combine plants, flowers and herbs with a Ugni white wine base. He perfected his Chambéry-style vermouth, with a multiple-month maceration of a wide variety of Alpine mountain plants in dry white wines from the region. Formerly reserved for aperitif tasting, vermouth is now very popular with bartenders.
